Sugar-Free Eggnog

My grandfather is a twinkle-eyed twelve year-old during the holidays. I say this with more love and respect than you can imagine, of course, but facts are facts. He answers the phone with a “Gobble-Gobble” on Thanksgiving, scheming with the aim at shocking/scaring my Aunt Stacy one way or another. One time, a couple of years ago, he got up from the table and snuck out of the house. Minutes later, he returned with a clean-shaven face (something he hasn’t sported since his twenties). Stacy nearly fell out of her chair.

His enigmatic, sprite-like sense of humor has only become wonkier with age, and when you mix a little brandy into the equation, he is positively relentless. He orders “sky-juice” at restaurants in lieu of water and when relatives call bidding tidings of great joy, he tells my grandmother that, if it’s his girlfriend, he is not home.

Come Christmas time, he nearly dances a jig when eggnog hits the stores. To my grandmother’s chagrin, he bustles about stocking their refrigerator with as many cartons of eggnog as he can possibly fit. The twinkle in his eye grows brighter and the pranks on Stacy become more frequent.

The discovery of diabetes however, has understandably hindered this excitement. But fortunately, I recently found out that you can now make a traditional or “cooked” version of his favorite holiday treat, eggnog by using Caffe D’Vita’s Sugar-Free (containing Splenda) French Vanilla Cappuccino mix. Here’s the recipe:

Ingredients for Eggnog: 4 separated egg yolks 4 separated egg whites 1/3 cup of Caffe D’Vita’s Sugar-Free French Vanilla mix 3 ounces of bourbon 1 teaspoon of freshly grated nutmeg


In a bowl gradually add the 1/3 cup of Caffe D’Vita’s Sugar-Free French Vanilla mix and egg yolks and continue to beat the mixture until it is completely dissolved. Add bourbon and nutmeg and stir. Beat the mixture until stiff peaks form. In a bowl beat the egg yolks until they lighten in color. Gradually add the 1/3 cup of Caffe D’Vita’s Sugar-Free French Vanilla mix. Continue to beat the mixture until it is completely dissolved. Set it aside.

In a medium saucepan, over high heat, combine the egg and Vanilla mixture. Warm everything in the pot and cook until the mixture reaches 160 degrees Fahrenheit. Remove the saucepan from the heat and stir in the bourbon. Pour everything into a medium mixing bowl.

Beat the egg whites until stiff peaks form. Whisk the egg whites into the chilled mixture. For a final touch, serve the eggnog with a cinnamon stick or a sprig of mint. Chill everything and serve.
