I love watermelon and it’s one of my favorite summer fruits. Watermelon contains 0.7 milligrams of iron in just two cups. It’s also a great source of vitamin C with 28% Daily Value in two cups. It’s hydrating as well.
Watermelon is perfectly okay to use in a green smoothie. The idea that watermelon must always be eaten on its own and never mixed is obviously not the case.
I really like adding parsley to smoothies as it is also a great source of iron. One cup of parsley contains 3.7 milligrams of iron providing up to 10% DV of iron for a vegan/vegetarian woman or almost 50% for an omnivore male.
I used frozen strawberries to make my smoothie a little colder, but you can use fresh if you prefer. If it is a particularly hot summer day, a frozen strawberry and watermelon smoothie is “heaven-sent”. Strawberries are a great source of vitamin C with 94% DV in just one cup!
With just 160 calories in this recipe, you can enjoy it as an afternoon refreshment, or before a meal.
Refreshing Watermelon-Mint Green Smoothie Recipe with Parsley
2 cups watermelon
11 fresh mint leaves
1 cup whole fresh or frozen strawberries
1 cup fresh Italian (flat leaf) parsley
¼ cup Caffe D’Vita Vanilla Base Smoothie Mix
Add all the ingredients to your blender and blend on high for 30 seconds or until the smoothie is creamy.
This smoothie is also a rich source of folate, vitamins B1 – B6, vitamin K, copper, magnesium, manganese, phosphorus and potassium.
